VINIFICATION AND STAGE
48-hour pre-fermentative maceration with controlled temperature. Separate harvesting of each caste, destemming, crushing, alcoholic fermentation with controlled temperatures in small mills at 25°C, with blanket submersion, pressing. Delastage and reassembly with aeration. Post-fermentative maceration with temperature control. Malolactic fermentation in French oak bellies.
Ovelha Negra Red Wine 2017
An exceptional and very interesting blend produced in the Alentejo region of Portugal, by our exclusive partner products.
The wine is produced at Herdade dos Assentes de Baixo by Joaquim Costa Vargas and is the result of a blend with Trincadeira and Alicante Bouschet grape varieties.
The end result is a 16º alcohol red wine.
As for terroir we can say that the vineyard is in an Atlantic-Mediterranean climate tempered with clay soil, with granitic and schist flowers and the Denomination is Alentejo Regional.
In the glass we can see a wine with deep violet color, followed by a very young aroma in the nose, with tertiary notes of wood, ripe berries, leather and balsamic, already in your mouth, a fresh, fruity taste and taste, with some Present tannins, slight roughness and rustic, will end the experience with a very persistent aftertaste.
