A journey of centuries - The Távora Varosa Region.
The production of sparkling wine in the Távora-Varosa region dates back to the 17th century, the year 1678, by the Cistercian monks.
This small wine-growing region borders the regions “Duriense” (Douro) and the “Terras do Dão” (Dão Region), we find the Geographical Indication “Terras de Cister” and the Denomination of Origin “Távora-Varosa” that being a small region, it is nevertheless very relevant in the production of sparkling wines, although it also produces fresh white wines and soft reds, which we will want to share here.
At the beginning of our project it was a gap that we registered, and that now we finally managed to have something that is very special and that represents the region especially well so that we can share with our customers.
This interesting region, which is located at the foot of the slopes of Serra da Nave, between the rivers Paiva and Távora, has traces of human occupation since proto-history and passed through it Romans, Suebi and Visigoths, having been chosen by the Cistercian Monks for there they built some of the most beautiful Cistercian architectural examples, such as the S. João de Tarouca Monastery, the first in the Iberian Peninsula, built in the 12th century.
Its unique climatic conditions, of predominantly granitic and low limestone soils, sometimes schist with marked erosion and acids, and a continental and dry temperate climate, with severe winters, make this region privileged in wine production.
With regard to white wines, the natural acidity, intense aroma and citrus character, bright and fresh, enhance its quality, but likewise, red wines seek this delicacy in the aroma and nobility of the body, achieving excellent aromas with time.
Most of the winemaking carried out in this region is Sparkling Wine, and in Portugal it is not only in this region that they produce this type of Wines, here it is a region of excellence for connoisseurs and lovers of sparkling wines.
