Resulting from the fermentation process of the juice or must obtained from dark or red grapes, it is crucial to macerate the skins in the must in order to impart color and flavor to the drink. The pulp of grapes, both white and black, is naturally clear and when pressed results in a cloudy juice categorized as “white”. The hue of the wine is determined by the way the grape skins are used. To produce red wine, the dark grape skins need to be left in the must, in a process known as maceration. The color of red wine varies depending on two elements: the variety of grape used in production and the length of time the skins are macerated in the must.
