Sparkling wines are characterized by the presence of CO2 resulting from the second fermentation, which gives them the typical “bubble” and foam characteristics.

Generally, sparkling wines go through the final stage of fermentation in the bottle (classic or champenoise method).

There is also the continuous process in which fermentation takes place as the wine passes through various tanks (where the wine ferments and ages) and the charmat method in which fermentation takes place in a closed tank.

Portugal produces different types of sparkling wine: white, red and rosé.
